Quick and Easy Vegan Apple Walnut Oat Bars for Baby

Now that Sunny is 8 months old, I've introduced solid foods at breakfast time instead of her regular bottle. Since breakfast can sometimes be a rushed part of the day, I wanted to create quick and easy recipes that can be made ahead of time and portioned out at meal time. I figured this would also be a great way to keep introducing her to food allergens like eggs and nuts. We had already ruled out those allergens months ago, so now it's about maintaining those foods in her regular diet.


These Vegan Apple Walnut Oat Bars have the optional ingredient of walnuts which I chose to add since it's a top food allergen. If your child is allergic or isn't ready for nuts yet, you can simply leave them out. Without nuts, this recipe is incredibly safe for any child to enjoy since it doesn't call for eggs, milk, or honey which also makes it a vegan option!


I've linked ingredients below, although I couldn't find some of the exact ones I used so there are some substitutes. Please note that if there is a gluten allergy in your family, you can use the gluten-free version of rolled oats instead.


How to Serve

Depending on what stage of baby led weaning your child is at currently, you can serve these cut lengthwise and they will pretty much hold up in the tightest of baby grips or you can crumble them into small pieces. You can serve them alone or with another food item. Sunny tried these along with a veggie egg casserole bake.

Vegan Apple Walnut Oat Bars


Prep time: 5 minutes

Cook time: 25 minutes

Difficulty: Easy


Ingredients


Directions

  1. Pre-heat oven to 375° F.

  2. Mix together all dry ingredients.

  3. Blend in applesauce and coconut oil until batter is formed.

  4. Lightly grease pan (I prefer glass) and then flatten batter down.

  5. Bake in the oven for 25 minutes.

  6. Let cool and enjoy!


Note:

I milled whole raw walnuts in my Nutribullet blender. I did the same with the rolled oats to grind them.
